Founder & CEO
Lucas is building Peppermint to make nutrition effortless — turning real-world food data into smart, actionable signals for healthier and longer lives.
Before Peppermint, he architected and led Fresh Funds at Instacart — the backbone of Instacart Health — supporting programs with Kaiser Permanente and Michelle Obama's Partnership for a Healthier America. He is a named inventor on 8 patents for AI-driven recommendations and has shipped work across checkout, order feedback, notifications, and health.
With nearly twenty years in product and platform roles, Lucas brings fast, grounded judgment at the intersection of engineering and product, operating as a hands-on CTO-type founder.
Yen Le
Co-founder, Product & GTM
Yen is a healthcare product leader with experience across global healthcare companies and high-growth health tech startups, including Sanofi and Beiersdorf. She has built products spanning patient engagement, data, and market access — giving her a strong understanding of how healthcare works across stakeholders and what holds them back.
Before Peppermint, Yen founded Birdie AI, a personalized nutrition platform for pregnancy and postpartum care. There she explored early applications of AI-driven health guidance and behavior change, laying the groundwork for more proactive, everyday health management.
Outside of work, Yen enjoys cooking and researching nutrition science, with a focus on food as medicine.

We're looking for the public voice of Peppermint — someone who can take our mission of effortless nutrition and make it resonate across the health and wellness industry.
Ideally, you come from food, nutrition, or wellness — not just marketing — and can speak authentically about why this space matters.
You'd own the brand narrative, represent us at conferences and in media, and build the relationships that turn awareness into credibility.
Ideal background includes:
- Building a personal or company brand in health, wellness, or consumer health tech
- Speaking, writing, or creating content that moves an industry conversation
- Working at the intersection of marketing, communications, and community — especially at an early stage
